I saw these chickens while walking around Les Halles and was shocked to see the head still on a chicken that seemed ready to cook. In the United States we would never have had a chicken displayed in a grocery store with the head still on it. However, what really struck me about this photo came later on when I was talking to my host mom about how on the news she heard there was a ban on chicken imports from the United States into France because the French (and all of the EU) have higher standards of cleanliness for their chicken. The US uses chlorinated water as a decontaminant and France bans all use of chlorine. This relates back to the importantance of the AOC and terroir in France. The quality of food is valued at a much greater level for the French than Americans as we use all kinds of pesticides that they don't.
